Urban Harvest isn’t just about fresh produce — it’s about reimagining food experiences. What inspired the brand’s inception, and how has the mission evolved since then?
Urban Harvest was created to simplify prep for HoReCa kitchens and consumers. Fresh ingredients were available in the market, but they came with challenges — long prep times, wastage, and inconsistency. We saw an opportunity to change that by offering solutions that are pre-processed, reliable, and convenient. From fresh-cut fruits & vegetables to ready-to-eat packs, chutneys, dips, and salads, our mission has always been about bringing consistency and freshness together in a format that saves time and effort. Over time, we’ve evolved from being just a supplier of produce to a brand that powers modern kitchens with complete, ready-to-use solutions.

You describe Urban Harvest as “a culinary experience.” How do you blend food processing with creativity to deliver products that stand out in a competitive market?
Across our product categories, we focus on both precision and creativity. Fresh-cut FnV is all about standardization — uniform sizes, consistent quality, and zero prep hassle. Ready-to-eat packs and salads bring in creativity, with carefully designed combinations that are convenient yet exciting. Chutneys and dips add versatility, enhancing everyday meals while being portion-controlled and easy to use. Behind it all, our processing systems ensure consistency, while our culinary team experiments with seasonal ingredients and global inspirations to keep the range fresh and innovative.

Can you walk us through your product development process — from selecting produce to curating the final customer experience?
It begins with sourcing. We work directly with farmers and trusted suppliers to ensure the raw produce meets our standards. Once it reaches our FSSC 22000-certified facility, the produce undergoes rigorous inspection, washing, cutting, and packaging in temperature-controlled environments. For each category — whether it’s a salad, chutney, or RTE pack — our R&D team develops recipes and combinations that balance convenience with taste. Packaging plays a big role too: MAP and vacuum sealing preserve freshness across our entire portfolio, ensuring customers receive products in top condition.

How do you ensure freshness, consistency, and safety in the processing and packaging of your products?
Freshness starts at the source, and safety is built into every step. All our product lines — be it fresh-cut FnV, dips, RTE packs, or salads — are processed in controlled environments with strict hygiene protocols. We use MAP and vacuum sealing technologies to extend freshness naturally. Cold chain logistics, with hubs in Delhi, Sonipat, Himachal Pradesh, Bangalore & many more, ensure temperature-sensitive items remain consistent across categories. The result is reliable, ready-to-use products that kitchens can trust every day.

Urban Harvest offers everything from apples to zucchinis, plus RTE packs, chutneys, and dips. How do you manage inventory, quality control, and seasonality across such a wide range?
It’s a combination of tech and strong supplier partnerships. Our backend systems monitor real-time inventory and forecast demand across categories. For fresh-cut FnV, we manage seasonality through close ties with farmers and aggregators. For RTE packs, dips, and salads, we adjust menus slightly depending on seasonal availability without compromising quality. Quality control is non-negotiable across SKUs — every batch is inspected to ensure consistency, whether it’s a simple cut vegetable or a multi-ingredient dip.

What are some of the technological tools or innovations you’ve adopted to optimize post-harvest handling and minimize spoilage?
Across all product lines, we rely on technology to maximize efficiency. IoT-enabled cold chain tracking and AI-driven forecasting help us align supply with demand. MAP and vacuum sealing extend the shelf life of fresh-cut FnV, RTE packs, and dips without additives.

Where do you see Urban Harvest heading in the next 2–3 years?
The future is about scaling convenience. In the coming years, we aspire to strengthen our position as a trusted partner for comprehensive food solutions across India. From fresh-cut fruits & vegetables and wholesome salads to flavourful chutneys, dips, and an expanding Ready-to-Eat range, our portfolio is built to meet evolving culinary preferences.
